Buying meat here is a whole new experience. One that requires Google! 

Chapon  - castrated rooster 

Canette - female duck

Pintade - Guinea hen

Poularde - a domestic chicken at least 120 days old at slaughter fattened on feed that delays egg laying (so a fat pre-pubescent hen)

And that's just basic poultry!
